1) I think our cat Figgy is suicidal. Yesterday, I had gone to the store. Previously, I had finished off a small bag of Cheetos and left the bag on the end table near the couch. While I was at the store, our cat got curious. My husband (thankfully) woke up and looked in our second room to see a small Cheetos bag stuck on the head of our cat. Figgy was hyperventilating until he heard Alex’s steps and calmed down as Alex removed the bag leaving a very sweaty, orange dusted cat. This is the second time Figgy has placed his head into something and couldn’t remove it that we have somehow caught it just in time and it is always when one of us is sleeping and the other is not in the apartment. Curiosity almost killed the cat.
2) I hate washing dishes and somehow in a family of (at the moment) two and a cat they seem to just keep piling up. Granted, it is due to us having too many dishes from the set we registered for when we got married. Goal for today, besides finishing as many dishes as possible is putting the nicer set in a box since we rarely have guests over and the plates are quite large. This way there will be fewer dishes (yay!) and since we will have only the smaller plates, we will also eat less.
3) Due to Alex’s employer changing the insurance and making it the highest deductible that is possible, we currently have to pay all the medical bills up till $3,000 (yep, I was not happy). And after blood tests and this weird X-ray ultrasound thing, we used all but $120 of our $1,349 tax refund (again, not happy). Why is it so expensive to be healthy? Here, I am with high insulin and epilepsy that requires me to be on medication and even the generic form of my epilepsy medication tripled in cost (Glucophage is not expensive at all thankfully) from last year ($5 to $18). It causes me to wonder that as much as I want to build a family with my husband if we would be able to afford the health costs that are required both for myself and our child (children).
4)Made these awesome monster cookie inspired no bake cookies. I used dark chocolate M&M’s and semi-sweet chocolate chips to make them slightly healthier (not that they are that bad to begin with)
No Bake Monster Cookie Granola Bar Bites
•1¼ cups old fashioned oats
•½ cup creamy peanut butter
•¼ cup honey
•⅓ cup mini m&ms
•⅓ cup mini chocolate chips
1.Dump all your ingredients into a medium sized bowl.
2.Stir well for a few minutes until everything is combined and oats and chocolate pieces are coated with wet ingredients.
3.Roll mixture into small balls (about 1 – 1 and ½ inches in size) carefully. (Wash your hands occasionally to prevent mixture from sticking to them too much)
4.Place bites on a cookie sheet lined with parchment paper.
5.Allow to set in the fridge till solid.
6.Store in fridge in an airtight container or ziplock bag
